Whole Wheat 2 Layered Heart Shape Carrot Cake

 

Every bite of this cake just takes me away to when I was a young child, running through the fields of lush grass mixed with weeds and beautiful wild flowers. Whole Wheat 2 Layered Heart Shape Carrot Cake, is a fantastic cake which takes me back to eating fresh whole grain desserts as a young child. Oh, how I can reminiscent on the magical moments of how my family recipes has shaped my life. 🙂

You know, I really enjoyed using those heart shaped baking dishes, as I feel that women are the HEART of the home. We really know how to set the tone in and out of our residence. The heart is also what keeps our bellies and minds satisfied!

With that being said, let me just say that I guarantee you, that you will never know that this cake was made with 100% Stone Ground Whole Wheat Flour. I really do not like tooting my own horn but, this cake is so darn good. I mean, SECONDS good! As my grandmother use to say, “She put her foot in that recipe“! Essentially, that little southern saying just means “IT TASTE SO GOOD“! 🙂  LOL

I must be honest with you by saying Mother’s Day was a few days ago! Through my lens, Mother’s Day is such a beautiful holiday to give or show appreciation to your mom or mother figure. I created this beautiful cake for my mom, my hero and my ride or die fan. My mom really means the world to me and there is nothing that I wouldn’t do for her. She loves Carrot Cake , which is why I made this cake. Unfortunately, I wasn’t able to be with my mom for Mother’s Day, however the cake I made for her did not go to waste! ;(

Instructions
  1. Begin by preheating your oven to 350 degrees. In the mean time while the oven is per-heating, prep your heart shaped baking pan with oil and flour or line with parchment paper
  2. Next, add the carrots, applesauce, coconut oil, cinnamon stick, 8-10 tbsp of water and vanilla bean to a high powered blender. Blend together for 1-4 minutes or until smooth.
  3. In a large bowl, mix together the flour, sugar, baking powder, nutmeg and ginger. Set aside.
  4. Grab another medium size bowl and pour in the pureed carrot mixture. Add the eggs and whip together for about 1 minute.
  5. Now, pour the pureed carrot/egg mixture into the dry ingredients and mix together thoroughly. Be sure to mix everything together well.
  6. Finally, add the chopped carrots and pecans. Simply turn the carrots and pecans into the batter. The batter will be a little thick.
Batter To Heart Pan Baking Pan
  1. For this step, I used a 1/2 cup measuring utensil and scooped the batter out in the the baking dish. The batter will be a little tick, so just add water to the spatula when spreading the batter in the pan
Bake
  1. Bake the cake for 15 minutes and then check by inserting a tooth pick into of the cake. If the tooth pick has batter on it, then continue to bake and check every 5 minutes. If the tooth pick comes out clean, then the cake is done
  2. Let the cake cool, uncovered on a rack for 2-3 hours before adding the frosting of your choice!
Coconut Cream Cheese Frosting
  1. In a large bowl, or Kitchen Aid, mix together all of the ingredients on medium high speed for 2-4 minutes.
