I love wedges! 🙂 I think it is one my favorite quick meals to make when I am feeling lazy or just in the mood for some good ol potatoes. 🙂 Not only do I enjoy eating baked wedges but I also enjoy fresh  Guacamole! Baked Wedges And Chunky Guacamole is spot on with being darn good, quick to bake and easy to make.

Chunky Authentic Guacamole

Mmmmm…… good! Chunky Authentic Guacamole is on point! This is my husband’s go to  guac recipe, but I tweaked it a little bit to make it vegan friendly. If your not vegan, than I will let you in on my husband’s secret ingredient which it makes Chunky  Guacamole SUPER Creamy! Aside from the onions, cilantro, tomato, jalapeño/Serrano pepper, lime juice and salt , this guacamole is such a hit because it can be enjoyed with chips, sandwiches, and just about anything!

Now on, to the juicy news!! What makes Guacamole Creamy???? 🙂 Could it be olive oil, more lime juice , cream cheese, mayo or oven coconut oil? The answer to that question is, No!!! The secret ingredient is SOUR CREAM! That’s right, sour cream can turn any guacamole into a creamy masterpiece.  🙂

Baked Potato Wedges

White potato or sweet potato… decisions, decisions, choices and more choices. To be quiet honest, Wedges With Guac is darn good with either white potato or sweet potato or even both. There are several ways you to make wedges. You can have skinny wedges, medium size wedges or thick wedges but personally I like my wedges a little on the thick side and a wee bit on the crispy side! 🙂

Instructions
  1. Start by preheating your oven to 400 degrees. Add the sliced wedges into a zip lock bag, along with the coconut oil and Lawry's season salt. Shake it all up and add it to a un-greased baking sheet. Bake for 25 minutes, but be sure to flip halfway through baking, so both sides will be crispy.
  2. In the mean time, cut the avocados in half, then remove the pits. Scoop the avocado flesh into the bowl. Gently mash the avocados with a spoon. Add the juice from 1 lime, salt, pepper, tomatoes, onions, Serrano pepper and mix together. Mix in the chopped cilantro last along with the sour cream if you want a non vegan option Stir lightly and combine.
Recipe Notes
  • Another way to make your fries extra crispy is by soaking the cut wedges for 30 minutes in a bowl of cool water.
