Tofurky Avocado Sandwich

We started eating Tofurky Avocado Sandwiches over a year ago, when I learned about wood chips being one of the preservatives added to regular lunch meat. I remember the moment when we made our first sandwich with tofurky. My husband was eager to try it right away, however I was not so enthusiastic . I was very skeptical on trying it… change can sometimes be hard for me.

Nonetheless, my husband made the sandwiches for everyone, my eyes were large with curiosity as I waited for our daughter to say “YUCK”. No one said anything!! I was shocked and still very skeptical however, I gathered up my courage and took a bite…… To my surprise, the tofurky tasted pretty darn good, which is why I’ve been hooked on tofurky every since.

Our daughter has to take lunch to school everyday so we pack one or two sandwiches a week for her. She has never realized that it isn’t “real” lunch meat, but we never really told her it wasn’t. It was a win-win situation for the entire family.

Tofurky Avacado Sandwich
Tofu lunch meat taste so awesome. It has the same similar taste as turkey lunch meat, but its just made with tofu. I wanted this particular tofurky sandwich to be simply lite and delicous. This is my families go to sandwich for the week, when we pack our lunches.

Instructions
  1. Before we get started, gather all of the ingredients needed to make this sandwich
  2. Lay out the bread on a flat surface.
  3. Slice the avocado vertically and then set it aside.
Topings
  1. First spread the vegenaise onto the bread. Then top with the spinach. Layer the tofurky on top of the spinach. Finally scoop out the sliced avocado and place it on top of the tofurky. (Optional , add mustard to the other slice of bread)

  2. Add second slice of bread to the sandwich. Serve and enjoy!
