Last Sunday I was craving something sweet that could be paired perfectly with pecans. Tempted to make my favorite pecan pie, I opted to make something that wouldn’t take as much work. So that’s when the lazy part of me created Sweet & Salty Pecan Graham Cracker Brittle Bites. Totally a tongue twister! 🙂

Pecans and cashews are my favorite type of nuts. They are both fight for first place, but as you know, my daughter Alex is allergic to both of these delicious nuts. Therefore, I will be making another brittle bite for all of my nut allergy pals out there. I can’t have you or Alex missing out on all the brittle bites! 🙂

Close your eyes, well I guess you can’t close your eyes and read this at the same time. So I suppose you’re going to have to be an open eye visionary (chuckling to myself). Nonetheless, I baked these bites after my kids were sound asleep. Before Josh and I enjoyed Star Wars Rouge One for the 10th thousandth time, these bites had finished baking, so I popped them into the fridge.

About an hour and a half had passed, I was knee deep into the movie when my husband decided that it was time for a snack. Still tuned into Star Wars, I payed no attention to Josh, until the sound of quiet crunching ringed my ear drums. You already know what happens next. I caught Josh eating the goods, while he pretended to be looking for a snack in the pantry! So my first thought was to fuss, until the Sweet & Salty Pecan Graham Cracker Brittle Bites started calling my name. Let’s just say they were absolutely irresistible and worth every bite.

Instructions
  1. Turn oven onto 350 degrees.
  2. Now start by melting the butter, sugar, salt and vanilla on medium heat in a sauce pan for 1-2 minutes. Stir occasionally.

  3. Lay wax or parchment paper on a 9x13 baking sheet and then top with the graham crackers.
  4. When the sugar and butter has melted, pour the hot mixture on top of the graham crackers and spread it across evenly.

  5. Top with your desired amount of pecans and bake for 20 minutes.
