When I took this shot above I wanted to feel like a queen being served a simple, yet beautiful  light meal. However, as I pondered upon being served this beautiful tray, I wondered how precious it will be to serve the poor and less fortunate. Serving others can be the most blessing time that we give from ourselves to help others. 🙂

Spicy Stuffed Avocado Tofu Salad is a deliciously light meal, that is full of healthy fats and clean plant based protein. You can easily enjoy this meal for lunch, brunch, or dinner. This recipe is quiet easy to make and requires only 11 ingredients. 🙂 (11 ingredients isn’t a lot, right?? Ha-Ha)  Did I mention to you that this recipe only requires 1 bowl as well? That’s right, this simple meal makes for a clean kitchen! 🙂

Avocados are not just made for toast, dressings or guacamole! This delicious fruit can be loaded with fillings, which can make for the perfect breakfast, lunch or diner. Stuffed Avocado Tofu Salad makes for the perfect low carbohydrate meal, in under 15 minutes. I just sometimes wish that all my meal took 15 minutes or less to prep and cook! (So much for those wishes! Ha-Ha)  🙂

Nonetheless, tofu salad is just one of many salads which can me stuffed inside of an avocado! But the coolest, part of this recipe, is that you can switch out the vegetables to whatever you have on hand or prefer. Awesome, right ?? 🙂

Spicy Stuffed Avocado Tofu Salad
Stuffed Avocado Tofu Salad makes for the perfect low carbohydrate meal, in under 15 minutes.
Instructions
  1. Slice the avocados in half and remove the seed. Set the avocados aside.
  2. In the mean time, in a medium bowl mix together the remaining ingredients.
  3. Scoop the tofu salad into the center of the halved avocados and enjoy!!
