Spicy Shrimp Cocktail

 

Let me start by saying, Happy Belated Cinco De Mayo Day! I had the privilege of enjoying this mouth watering  dish for Cinco De Mayo and it was yummy. Spicy Shrimp Cocktail is a fun dish that is full of crisp and colorful vegetables that will simply magnify your dinner or it can be the main dish for any party that you are hosting.

Simply make Spicy Shrimp Cocktail the night before or the morning of your party and let time do the rest. This simple family dish will only take 30 minutes or less of your time to make! However, be aware that it will require a couple of hours to cool and this dish will need to marinate in the fridge. I truly enjoyed making this dish and I believe you will enjoying eating this cocktail just as much as you will enjoy making it!

Prepping this dish ahead of time would be the ideal thing to do. Just dice up a few tomatoes, onions, and cucumbers to create the main dish for your celebration! Not only is it easy to make but it is perfect for entertaining guest or having a cold light lunch or dinner..

Instructions
  1. Begin this recipe by adding the shrimp, salt, garlic and water to a large pot. Cook the shrimp for 10-15 minutes or until completely done.
  2. In the mean time dice/chop up the cucumber, tomato and onion into bite size cube pieces.
  3. When the shrimp turns pink or is fully done remove the shrimp from the pot. DO NOT GET RIDE OF THE WATER WHICH THE SHRIMP WAS COOKED IN. INSTEAD ADD THE WATER TO A LARGE BOWL, AS THIS IS THE BASE FOR THIS RECIPE.
  4. Now peel the shrimp and dice/chop them into into bite size cube pieces.
  5. Add the cubed shrimp, tomato, cucumber, onion and remaining ingredients to the large bowl of water.
  6. Mix everything together very well and add optional roughly chopped cilantro.
  7. Refrigerate Spicy Shrimp Cocktail, for at least 2 hours and then enjoy!
Recipe Notes
  • Add additional salt to taste if desired
  • Enjoy with your favorite crackers.
