I used to think that making Pico De Gallo was so complicated. Not only that, but I wouldn’t eat it because of my fear, of tomatoes. To be honest, the first time I had Pico De Gallo was when my mother-n-law made it. It was amazing over my omelette for breakfast, which is why I must confess, that I felt like an absolute fool for never trying it. Ironically, so many of us fall into that boat of never trying anything new. However, I vowed to try all food dishes once, even it makes me wanna puke. Ha-Ha

None the less, Pico De Gallo adds a perfect balance on top of any meat, inside an omelette or you can use it as a light and healthy dip for chips. It’s fresh, full of veggies and you can add fruit or other vegetables to make it unique. With only 10-15  minutes of your time, you can add a serving of fresh ingredients to your dish.

Not to get off topic, but man do my insides jump with excitement, when I’m able to walk outside to my garden and gather all of these ingredients. Gotta love a backyard garden!

Instructions
  1. Start by gathering all the ingredients needed for making Pico De Gallo.

  2. Dice tomatoes into small cubes.

  3. Add diced tomatoes to a large bowl.

  4. Roughly chop the bell pepper into small cubes.

  5. Add bell pepper to the tomatoes in the large bowl.

  6. Next chop up the onions into small bite size pieces. The smaller, the better so that you don't bite into a large chunk of onion.

  7. This step is optional if you want a hint of spice. Start by cutting the stem off and cutting the pepper in half.

  8. De-seed and chop the Serrano Pepper into small chunks. The smaller the better. Again this step is optional

  9. Finally add the chopped Serrano Pepper. Then cut 1 lime in half and squeeze the juice from the lime into the bowl. Stir all ingredients together.

  10. Taste the Pico De Gallo, if it taste like lime don't add the other half of the lime, but if doesn't taste like lime then squeeze half a lime into the Pico De Gallo. Serve or refrigerate.
