It’s that time of the season, when warm days are near, the heat index is creeping up and summer is near. Oooo, how I LOVE SUMMER (singing as Olaf in Frozen)! 🙂 I absolutely love the warmer months, because of all the cold refreshing snacks, desserts and meals that you can consume! Mango Apple Pico De Gallo is a perfect, refreshing dip for any warm day. Pico De Gallo is full of  several different fun summer ingredients.

Pico De Gallo In Texas

I made Mango Apple Pico De Gallo while visiting my mom in Texas. I enjoy my trips to Texas, because everyone seems to have that mentality of “Go Big or Go Home”! Ha-Ha 🙂 So, I whipped up this salsa for a little gathering we had and it was a “GO BIG” success. This deliciously sweet salsa was perfect for the Texas heat and Lime Tortilla Chips. The extra hint of lime and salt in the tortilla chip, created a sweet and salty sensation with every bite.

20 Minute Pico De Gallo

With only 8 ingredients and 20 minutes max of your time, you can make this salsa way ahead of time. Unlike traditional Pico De Gallo, I did not use any Cilantro, however I did use mint flakes and oregano. The mint flakes added a refreshing and cooling twist to the Pico De Gallo, along with adding a sweet smelling aroma to the entire dish. Ironically, Oregano is apart of the mint family, so I used a dash of this herb to create a savory balance.

My children, mostly my daughter, fears all things “spicy”! So, although I did add one jalapeno, to the Pico De Gallo, you honestly can not taste any heat. My sweet Alex, absolutely enjoyed this salsa as the heat intensity is a 1 out of a 10.

Instructions
  1. Start by chopping up the tomatoes, apple, bell pepper and jalapeño pepper into small bite size pieces.

  2. Add the chopped tomatoes, apple, bell pepper and Jalapeño Pepper to a medium size bowl.
  3. Next, slice the Mango into small chunks and add to the bowl. Slice the lime in half and squeeze all the juice from the half of lime into the bowl.

  4. Stir everything together. You can add salt to taste in this step, if you would like. However, I did not add any salt. Refrigerate until chilled, about 2 hours before serving.
