It’s mid summer and picnics are in actions!! Whew! 🙂 Not only are picnics in action but so is the fight between sunshine and rain where I live. It was been raining nonstop so I am going to enjoy a slice of pie, with the sound of the rain, a hot cup of Joe and a romantic novel. 🙂 (Romance novels are the best) 😉

Vegan Flaky Pie Crust

I believe that the crust is the best part of any pie. I absolutely love breaking off pieces of any pie crust to just eat alone. So, having a good pie crust is a must. 🙂 Now I have been playing around with vegan pie crust for some time and I found an additional additive that will make this crust taste simply amazing!!

That simple additive is VODKA !!! 🙂 I know, totally shocker (ha-ha). However, vodka will make any pie crust flaky, crunchy on the outside and soft on the inside!! Now granted, the vodka will cook out of the dough, so you wont be able to get buzzed off of it (Ha-Ha). Unless, your taking shots on the side (I’m not judging 🙂 ) !

Nonetheless, please remember that vegan pie crust will NEVER taste like traditional pie crust because you need pork fat (aka Lard) to have some delicious pie crust! 🙂

How do you like to eat your apple pie and when? I like my pie any time of the day as a meal!! Crazy Right??? I can eat pie for breakfast, lunch or dinner!! 🙂 However, I am a bit particular about the toppings, based upon the time of day!

I will eat Vegan Apple Pie with vanilla ice cream, whip cream, cool whip, cheddar cheese or any of the combinations together. Not to mention, that when I eat apple pie plain Jane, I will also have a small cup of coffee (aka Joe) on the side.

By the way, do you remember that OLD New England saying that, “apple pie without some cheese is like a kiss without a squeeze” ? (Ha-Ha, I do enjoy a good squeeze) lol 🙂 😉

Instructions
  1. Add the coconut oil to a small bowl and set in the freezer for 5-10 minutes (Coconut oil should not be solid).
  2. In the mean time place the flour and salt in the bowl of a food processor and pulse a few times to mix. Add in the coconut oil and pulse 8 to 12 times or until the coconut and flour begins to look crumbly.
  3. Pour the ice water and chilled vodka and pulse until the dough begins to form a ball. Dump the dough out on a lightly floured board and roll into a ball. Cut the ball in half and wrap them in separate plastic wrap and refrigerate for 2 hours.
  4. After the dough has rested in the fridge, roll each ball on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board (you my see chunks of coconut oil, and that's okay). Fold the dough in half, place in a pie pan, and unfold to fit the pan.
  5. On a lightly floured surface, roll out the other half of your pie dough.Cut the dough into even strips, 1/2-inch to 3/4-inch wide, depending on how thick you want your lattice strips. You can use a blunt knife with or without a ruler or straight edge to guide you, or you can just eye ball it! 🙂 Place in the fridge will you create the pie filling.
  6. In a medium pan, add all of the pie filling ingredients and cook on low medium heat for 10 minutes. Stir continuously.
  7. Take the uncooked crust out of the fridge and fill the pie shell with the pie filling and then lay out a few parallel strips of the pie dough. Fold back every other strip.
  8. Place one long strip of dough perpendicular to the parallel strips. Unfold the folded strips over the perpendicular strip and continue this process until the weave is completed.
  9. To make the braid, use at least 10 inch long strips of dough and braid them together.
  10. Bake for 20 to 30 minutes or until done. My pie took exactly 25 minutes to make.
  11. Allow the pie to rest for 20 minutes and then enjoy ! 🙂
