Whew!!! I heart muffins, especially large blueberry muffins. If I wasn’t so worried about all my love handles, I would probably eat a muffin every other day. I would have one cute muffin top, or at least I would tell myself that. Ha-Ha-Ha 🙂

Anyway, these muffins are made with with half wheat flour, they are large, full of flavor and delicious. Who would have known that oranges and blueberries, makes for one bad mama jamma ! 🙂

Vegan Blueberry Muffins

Sometimes I believe that baking vegan dishes can be a little bit of a challenge, just because the texture and the consistency doesn’t always come out as planned. Eating a vegan lifestyle shouldn’t make you feel like you are being punished.  But to be fair and honest, I must say that I don’t eat completely 100% vegan yet. I do fluctuate between vegan and vegetarian, however, my family still consumes meat no more than 2x a week. Nonetheless, Vegan Blueberry Muffins are exceptionally delicious and they taste like traditional muffins, just healthier and better.

Personally, I have chosen to live and be healthier. I try not to let a particular lifestyle dictate what is healthy and what is not. Instead, I let whole grains, fruits and lots of vegetables strengthen my body and my mind from the inside out!  😀

Instructions
  1. Preheat the oven to 400 degrees and line the moules parchment cups in a muffin pan and set aside.
  2. Measure 1 cup of oat milk, 1 tsp distilled vinegar, and 1/4 tsp baking soda in a measuring cup and set aside for 5 minutes.
  3. In the mean time in a large bowl shift together the flour, sugar, sea salt, baking powder and ground cinnamon.
  4. Stir in the oat milk, coconut oil and pure orange extract to the large bowl.
  5. For this step I recommended adding 1 cup of frozen blueberries with the all purpose flour, in a Ziploc bag and give it a few gently shakes. Add this mixture to the batter and add mashed fresh blueberries and the zest of 1 orange to the batter.
  6. Gently fold the batter together until well mixed.
  7. Scoop 1/4 cup to 1/3 cup of batter into the moules and bake for 30-35 minutes. (Optional - you can also sprinkle a little bit of pure cane sugar on top of the batter before baking)
  8. Use a toothpick by inserting it into the middle of the muffin to check and see if it is done. If the the toothpick comes out clean then the muffins are done, if not just continue to bake and check every 5 minutes.
  9. Let the muffins cool before serving and enjoy!
