I remember it just like yesterday, when I use to go visit Grandma Tac down the long dirt road. She was such a beautiful Blackfoot Indian woman with long dark black hair, high cheek bones, and dark dreamy eyes; not to mention she always smelled of sweet herbs.

Anyway, it was many many years ago, but I still remember one of her favorite soups to make. This soup is layered down with dried herbs, and hearty vegetables. I added in my personal touch of grilled cheese , since it pairs perfectly with this Hearty Tomato Soup!

I am personally all about layers, texture and flavor. Soup isn’t meant to be boring or bland but instead it is meant to be explosive and delicious! However, I must add that this soup is beyond just a regular Tomato Soup. Hearty Tomato Soup is meant to have toppings for an extra crunch or spicy bite. It is also meant to be HEARTY, with texture from various vegetables and not pureed! 🙂

Oh, do we love Grilled Cheese!! It’s bread, 🙂 and it is cheesy! 🙂 But is there a right or wrong way to enjoy the perfect Grilled Cheese Sandwich? I say…. HECK NO!

I like my grilled cheese with 2 slices of Vegan cheese, mayo on both sides, however my daughter and husband like there’s, lathered in butter with Goat Cheese and my sweet son likes his with cow’s cheese (plain Jane). So, with all of that in mind, make YOUR grilled cheese anyway you like! AND with any bread that you have on hand. Don’t stress about the bread and cheese. HA-HA… 🙂

Instructions
  1. Begin by roasting the tomatoes in a large cast iron frying pan, on medium high heat until all the sides of the tomatoes are burnt or the skin begins to peel off.

  2. Remove the tomatoes from the pan and place in a large bowl. Peel most of the skin off of the tomato, cut in half and remove most of seeds from inside of the tomatoes. Add the peel tomatoes to a dutch oven.

  3. Add the remaining ingredients to the dutch oven and mix together. Bring the dutch oven to boil. When the soup begins to boil, turn the eye down to a low simmer, add cover with the lid.
  4. Cook for 1.5 hours to 2 hours. Make your favorite style of Grilled Cheese and enjoy!!

Recipe Notes
  • If you do not want to roast the tomatoes, you can blanch them in hot water for 1-2 minutes, and then put them in an ice bath. Remove the skin and the seeds as normal.
  • You can also add tomato paste, flour or corn starch to thicken the soup up when it is done cooking. I did not thicken it up as I thought it cooked perfectly.
  • Cooking times will vary so, please check your soup after 1.5 hours.
  • Do stir 1-2 times to just to make sure everything is cooking evenly and not sticking to the bottom of the pan.
