Ironically, I am new to the gluten free life, but my Gluten Free White Chocolate Chip and Pecan Cookies are to die for. Just kidding, not! Theses cookies are really the bomb dot com. A moment of truth….

At first I was a little skeptical with using gluten free flour. I didn’t realize that gluten free flour tasted just as good as unbleached flour and it is also healthier. To be honest, I always enjoy the blissful taste of a good moist and soft cookie however, in the back of my mind, I didn’t think that the gluten free flour would hold up to making such a tasty cookie. Nonetheless, my gluten free white chocolate chip and pecan cookie, is just that. It is a sweet treat for everyone to enjoy.

I honestly believe that you are going to love these cookies, just as much as I do. I made a batch of these for the boys at my husband’s work and they devoured them all. My silly husband said that the only thing missing with these cookies, was a glass of ice cold milk (Bud… beggers can’t be choosers) 🙂 !

Thanks to my sweet husband, I only got to taste 2 cookies, which was clearly selfish of him. Let’s face it, the greedy side of me could have eaten the whole batch of cookies but, my husband reminded me that I made it for the BOYS.

Instructions
  1. Start by preheating your oven to 350 degrees.
  2. Add coconut oil, brown sugar and pure cane sugar sugar to mixing bowl.

  5. Once the flour is well blended, add the egg and vanilla extract. Cream together until the egg is well incorporated.

  6. Add the chocolate and nuts. Use a big wooden spoon to mix ingredients together

  7. Drop cookie dough batter 1 TBSP at a time unto an ungreased cookie sheet.
