Gluten Free Coconut Flour Brown Sugar Cookies
Unlike other tasty desserts, cookies are kind of a grab and go sweet treat. Gluten Free Coconut Flour Brown Sugar Cookies, are a perfect pair for milk, tea, coffee or even a book on a rainy day. These cookies will simply melt your heart away with each bite. Yum-yum!
I know that your pondering on why I used coconut flour. So, let me first start off by saying, that coconut flour is gluten free. Not only is this flour gluten free, but perfect for all my friends who are watching their carbohydrate intake. This amazing earthy flour is low in carbohydrates, high in fiber, and also low in sugar. Please be aware that coconut flour loves moisture, so it will absorb liquids and eggs more easily. This is why you have to use so many eggs. Side Note: I am currently working on a vegan version of this cookie, which I hope to have published soon. 🙂
My amazing family loved these cookies. My daughter wanted them in her lunch box and snack bag every day. Let me just tell you that my Alex is one picky princess when it comes to her sweet tooth. She absolutely loves anything sweet and she will bluntly let you know you when a dessert just doesn’t taste right. Alex is a tough cookie. Ha-Ha
In the meantime while my kids were laying the smack down on these cookies, so were the people that my husband works with. I heard through the grapevine, that they were getting pretty possessive on who was to get the last cookie. 🙂
