Fully Loaded Chicken Cesar Salad is definitely on my summer comfort food list. My friend, this salad is loaded with grilled protein, crushed herbs, Parmesan cheese and loads of vegetables. Enjoy Fully Loaded Chicken Salad on a spring afternoon or during some summer fun. I absolutely love a hearty salad.

To marinate the chicken I used this recipe,  20 Minute Chicken Marinade. This marinade is perfect to use while your chopping up your vegetables, setting your table and waiting for the grill to heat up. It only requires 3 simple ingredients that most of us keep on hand or eat all the time. You can make a marinade for your chicken in less than 5 minutes. 🙂

So, Spring is one of my favorite times of the year because most farmer markets open up. I 100% LOVE local farmers and their produce. One day we will probably own our very own farm. I just love the smell of early morning dew mixed in with animal poo! 🙂

Nonetheless, I went to the farmers market a few days ago and started to pick more produce than my reusable grocery bag could carry. Every time we step foot in a farmers market, we just get so overwhelmed with excitement . If your in the area, check out NC State Farmers Market in Raleigh. You will absolutely  turn into a little kid in candy store. They have tons of yummy produce.

To be honest, in the picture above, I ate that huge bowl of salad all by myself and you must know that this salad bowl is pretty deep. 🙂 My mouth kept watering for just another bite, yet I was so stuffed. More or less, I was being extra greedy that day.

Instructions
  1. First, start by marinating your chicken and setting aside. Once your chicken is done marinating, grill or cook your chicken as desired.

  2. Next, chop up all of your vegetables.

  3. I honestly forgot to take a picture of this step... I'm sorry! So, in the mean time, grab a large bowl and add the romaine lettuce along with the spinach.
  4. In this step you will line up all of your vegetables and chicken as shown in the picture above. The cool thing about this salad is that you can swap out and replace any vegetables that you like or don't like.

  5. Now, just sprinkle all of the croutons, chives and cheese on top of the chopped vegetables.
