To be honest, this recipe is simply another way to get my whole family hooked on eating more vibrant fruits. You can honestly use any fresh fruit you have on hand to make a breakfast cobbler.

Although, blueberries can sometimes be a little on the tart side, your body will reap the rewards from the inside out. Not only are blueberries an Antioxidant Superfood, but you can find this sweet/tart fruit year round! Blueberries CAN be grown year round! 🙂

So, what can I say about oats? Beside the fresh savory earthy taste, steel cut oats are high in fiber, contains protein that’s need for your body and iron. Not only are oats healthy for you, but they are incredibly filling! According to some research, oatmeal’s filling power comes from its high fiber content and its ability to soak up water. Which means you wont overeat when eating oatmeal. 🙂

Instructions
  1. Start by preheating your oven to 375 degrees and setting 2 tbsp of coconut oil in the freezer to get cold and solid.
  2. Add a little bit of coconut oil or cooking spray and some flour to 2 5.5 in stone ware baking dish, so that the cobbler will not stick and then set aside.

  4. In another medium bowl, shift together the flour, sugar, baking powder, cinnamon and salt. Once shifted, cut in the coconut oil into the flour, so that it resembles crumbs. (Note:Not all of the flour will be crumbly). Next add in the Oat Milk and mix together to form a ball.

  6. Finally use a tbsp measuring spoon and spoon the biscuit dough on top of the blueberry mixture. Bake until the biscuits are golden brown at 350 degrees or for 20-25 minutes depending on your oven .
