I have been craving fried doughnuts but not all of the extra calories. Blueberry Lime Baked Doughnuts, are sweet, full of blueberries (my favorite fruit) and a hint of lime. Although, I can’t say that you will enjoy this doughnut guilt free but I can say every bite will be worth it! 🙂 Not to mention, I’m sure everyone will enjoy these doughnuts.

Baked doughnuts are a combination of doughnuts and cake! The combination of both make for a mean doughnut. One that that is soft on the inside and a little crunchy on the outside. However, baked  doughnuts have more of a cake like texture than they do doughnuts. But, fret not my friend, these babies are yummie!

Lime Meets Blueberries

When the lime meet the blueberry, they fell madly in love! 🙂 It was a juicy burst of flavor, with the first whisk! 🙂 Ha-Ha…… that was pretty funny! 🙂 Nonetheless, the combination of both of these ingredients, sweet, tangy and tart. I believe both fruits bring a different sweet, tangy and tart flavor to the bowl which creates one epic taste. Pair those babies with a sweetener and we simply have a master piece. Not only do they taste good together, but they look together as well. Lime and blue all the way!! 🙂 🙂

Doughnut Muffins ?

These mini doughnuts look more like muffins!!! All my fault, because I put too much dough. The holes closed and I guess these bad boys decided to go muffin! Ha-Ha! However, my toddler tore this doughnut muffins up! They taste the same, they are cute, and they are small! What’s not to love about that!

Blueberry Lime Baked Doughnut Batter
  1. Preheat oven to 350 degrees. Lightly spray cooking spray on doughnut pan.

  2. Add the milk and distilled vinegar to a bowl and set aside for 5 minutes.

  3. Puree frozen or fresh blueberries in a blender until smooth. If using frozen blueberries add 1/2 tbsp of water.
  4. In the mean time, in a large bowl mix together the flour, pure cane sugar, baking powder, baking soda, and salt.

  5. In a medium bowl, mix together the egg, milk, apple sauce, Million Dollar Vanilla Medjool Date Syrup, lime juice and melted butter.

  6. Now, add the wet ingredients to the dry ingredients and mix together with a wooden spoon or blender.

  7. Add pureed blueberries to doughnut batter and fold together.

  9. Add the batter evenly to the doughnut pans and remember not to add too much batter to the mini doughnut pan.

  10. Bake both pans on the top rack in the oven for 10-15 minutes. Allow the doughnuts to cool completely before adding the glaze.

Blueberry Lime Glaze
  1. In a medium bowl blend together the powdered sugar, lime juice, vanilla extract and milk for 2 minutes.

Recipe Notes
  • To puree the frozen blueberries, add to a blender and add 1/2 tbsp of water.
  • This recipe makes 11 large doughnuts and 12 mini doughnuts.
