My children and I have been traveling recently and somehow in the midst of all the moving around my son got sick. I mean really sick!! 🙁  He was happy and healthy one day but the next day he was coughing, not eating, having the runs and every thing that goes along with feeling under the weather. Needless to say, my daughter starting feeling under the weather a few days later and then it HIT me, for 3 whole days! 🙁 I couldn’t speak, I couldn’t lift my head up and I was all alone with my kids.

However, Dutch Oven 3 Bean Potato Soup came to my aid. The soup lasted the kids and I 3 days, plus it is full of healing herbs, hearty potatoes and protein loaded beans. I truly believe that this soup helped me each day as my body began to heal. The first day was the hardest, the second day I was able to make 2 recipes for this awesome blog and take pictures, yet by the third day I was full of energy (with a runny nose).

With all of that being said, Dutch Oven 3 Bean Potato Soup takes about 50 minutes to cook with pre-soaked beans and 1 dutch oven pot. It’s that simple! 🙂

Why 3 Beans?

Honestly, I just like beans  which is why I used 3 different beans and I live for soup! I think beans can carry an array of flavors no matter how prepare them. Each bean can offer a special taste as it soaks in the herbs and spices differently. Plus Kidney beans, which is one of the beans I used, contains more total dietary fiber per serving than the seven other most commonly consumed legumes in the United States. Talk about FIBER increase!! 🙂 The kids and I needed all the extra fiber we could get (thanks to these beans), to help push out those bad germs we had picked up! 🙂 But, really and truly, you can use this recipe as a base to whatever beans you have on hand! 🙂

For this particular soup, I used every fresh herb that I had on hand. I love herbs as they offer so many benefits and  they smell heavenly. I feel that herbs has the ability to open up your nasal passage when you are stuffy and boy the combination of all the herbs I used, really opened me up and helped me rest!! 😉

Dutch Oven 3 Bean Potato Soup can and should be enjoyed any time of the year. This soup is healing, healthy, full of protein, hearty potatoes and has lots of fresh herbs! Enjoy this soup with your favorite crackers, tea, and even fresh “bread sticks” (fresh bread cut into sticks)!

Instructions
  1. Begin by soaking the 3 beans in one large bowl for 6 hours or overnight. Make sure that the beans are completely covered with water.
  2. Next dice all of the vegetables and potatoes .
  3. Drain the water from the soaked beans and add them to a large dutch oven, along with all of the remaining ingredients. (See Notes )

  4. Bring the dutch oven to a boil on high heat, and then turn down to cook slowly on medium low to medium heat and cover with a lid.

  5. Cook for 50 minutes to an hour and then enjoy!

Recipe Notes
  • Please soak all the beans in one large bowl overnight. Be sure to cover the bowl with a lid or cloth.
  • If you do not want to soak the beans over night, then cook the beans, along with the herbs but without the potatoes and  veggies for 3-5 hours in a dutch oven. Add the potatoes and veggies when the beans are almost done. Be sure to check the beans after 3 hours has passed to see how tender they are.
  • Also, cook the beans on medium low to medium heat.
  • Cook times will vary depending on the dutch oven and the heat level of.
